Notes from a bad baker
Article By AliceI’m going to come out and say it that I, sometimes bake badly. That of course, with the exception of cookies, but there have been crazy moments cooking them too.
Through ‘learning experiences’, I’ve finally followed a recipe correctly and made the buttercream icing of my dreams, I thought it’s about time I share some of what I’ve learnt.
A practice I put about each time I bake cookies especially, is to write a little on how it’s doing at each step. To remember which parts I loved most and to guide me into making my own recipes.
I put titles down like:
Making: Here I put if I followed the recipe rightly, missed out any ingredients, whether or not the mixture looks as it should.
When hot: After baking I write whether the cookies were too close together on the tray, how they tasted when hot, if they broke apart or not.
When cooled: I do another taste test and write how they taste; too sweet, gooey, crunchy.
A quick summary: I finish by writing a few notes on what I did wrong, what I’d do next time, what I loved about them and how I’d eat them; dipped in coffee, after dinner snack or as quick as possible!

Other things I’ve learnt baking cookies and cakes:
American cups is not the same as using a standard cup to measure things
Too much butter/icing sugar in butter cream icing will hurt your teeth and too much milk makes it sloppy.
Follow recipes, they are reasonable.
Experiment with different colored icing and toppings, time to get out the icing pens!
Don’t get mad at yourself/the oven/ the baking equipment- your just learning and becoming a better baker for it.
